One of my favorite winter cookies, these will dazzle friends and family! They make a great addition to a gift basket or potluck. Feel free to substitute other types of dried fruit or even add chopped nuts.

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup butter (softened)
  • 1 cup granulated sugar
  • 2/3 cups brown sugar (packed)
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1 cup rolled oats
  • 1 cup instant oats
  • 1/2 cup white chocolate morsels
  • 1/2 cup dried cranberries (or other dried fruit)
Instructions
  1. In a medium bowl stir together flour, baking soda, baking powder, cinnamon and salt.

  2. In a large mixing bowl or stand mixer, beat butter for about a minute; cream together with granulated and brown sugar until fluffy. Next add the egg, milk, and vanilla and mix on medium speed until combined, scraping the bowl.

  3. With the mixer on medium speed (using a paddle attachment on a stand mixer) beat in the flour mixture 1/4 cup at a time until fully combined. The dough should be softer than chocolate chip and very smooth.

  4. Using a spatula fold in the oats, cranberries, and morsels until evenly distributed.

  5. Cover and chill dough for at least 2 hours, perhaps overnight.

  6. Preheat oven to 375°.

  7. Place 1 cup granulated sugar in a shallow dish. Forming 1-2" balls, roll cookie dough between the hands and then liberally coat in sugar. Place on a cookie sheet 3" apart center to center, and bake for 10-12 minutes or until evenly browned and slightly dark around the edges. Transfer immediately to a cooling rack.
