Before we moved to the homestead we made the trip to Oregon each year for every major holiday. Christmas is absolutely my favorite holiday and it’s always a tradition for me to make candy, jam and other various baked goods. Fudge being a personal and family favorite I started making it for our celebrations in Oregon and it quickly became a favorite of Grandma Jill’s too. My grandmother-in-law was one of my favorite people and I absolutely cherished seeing the look on her face when she arrived and spied the chocolate treat with various goodies tucked inside.

Unfortunately we lost Grandma Jill very unexpectedly this year. When it was time to go through her belongings I tasked my husband to only set aside what would be practical. I am not a save-everything kind of person, and the things that are most meaningful to us as a family are items that we will use on a regular basis and remind us of our loved one. I am especially fond of having recipes, so one of the first things my husband claimed was Grandma’s recipe book. She wasn’t much of a cook but boy did it bring tears to my eyes when I found my fudge recipe in her collection.
It’s quick, easy, and absolutely scrumptious; and every holiday season when I make it I will think of her smile.

Grandma Jill’s Favorite Fudge

Line your desired pan with tin foil. A single batch requires an 8″ pan. You may use waxed paper but I prefer foil as it is more moldable to the baking dish.

In a medium saucepan combine the sugar, evaporated milk, butter, and salt. Bring to a boil over medium heat, stirring constantly to prevent scalding. Boil for 4-5 minutes, still stirring, and then remove from heat.

Fold in chocolate morsels, marshmallows, vanilla, and any other inclusions. Make sure to mix well and ensure that the marshmallows have melted completely.

Pour the chocolate mixture into your prepared pan and chill for a minimum of 4 hours or until set. When firm, cut into squares or use a cookie cutter to make beautiful shapes for a dessert plate.
