
Who doesn’t love a homemade rice krispie treat? I doubled the classic recipe for a large-batch option, always a necessity in our home, and a fun sprinkle assortment pressed into the top makes for a festive touch. They come together in a flash for delicious weeknight treat or a last-minute party favor!
You can make these treats two ways: on the stove top (as they are traditionally) or in the microwave. There isn’t any difference in the final product but I do feel like there is an ease of preparation as long as you have a large microwave! A smaller microwave will require the use of two bowls which kind of defeats the purpose.
I like to compress my treat mixture down as much as I can for a denser, chewier finished product. If you like them light and fluffy you can gently pack them into the pan and wait for them to cool completely before cutting so that the edges don’t get smashed down!
You can find a million and one variations of this classic treat on Pinterest, but here are some of my favorite iterations:
- Add chocolate chips just before pressing into the pan. Don’t add them too early or they’ll melt and make a huge mess!
- Add M&M’s candy, again just before pressing out to avoid a mess.
- Use Fruity Pebbles, Cocoa Pebbles or even other types of cereals! This is a fun option for kids or birthday parties.
- Add another cup of whole mini marshmallows while mixing for extra yummy bites of marshmallow goodness!

Pour cereal into a large mixing bowl. Set aside.

In a medium saucepan melt the butter over medium heat. Add the mini marshmallows and stir until completely melted.

Pour the marshmallow mixture over the cereal and mix with a spatula until evenly distributed. Press firmly into a 11×13 pan or cookie sheet, or shape into balls. Let cool before cutting.
Microwave Instructions

Pour cereal into a large mixing bowl. Set aside.

Pour the mini marshmallows into another large mixing bowl. Set aside.

Place the butter in a microwave safe dish. Heat at 30 second intervals until melted. Pour over the marshmallows and stir to coat. Now heat the marshmallow mixture at 30 second intervals, stirring in between microwaving until completely melted.

Pour the marshmallow mixture over the cereal and mix with a spatula until evenly distributed. Press firmly into a 11×13 pan or cookie sheet, or shape into balls. Let cool before cutting.
